This Grinch cake mix cookie is simple and delicious. The green cookie is just the right amount of sweetness, and the soft texture leaves you wanting more. Baking this with a family would offer great bonding time because it’s inexpensive and is also handy for a last minute holiday dessert. With the recipe below you can make about 40-50 cookies at a price of $18 if you have to buy all the ingredients at once. 

Ingredients:

  • 2 boxes of vanilla cake mix: $1.35 per box
  • ⅔ cup vegetable oil: $2.20 for about 30-32 oz.
  • 4 eggs: $3.00 for a dozen eggs
  • teaspoon of vanilla: $3.00 for about a 4 oz. bottle
  • Green gel food coloring: $3.00 for a 4 pack of gel food coloring
  • ⅔ cup of powdered sugar: $2.00 for 32 oz.
  • 3 tablespoons of cornstarch: $1.20-2.00 for 16 oz.
  • Red frosting: $1.60 

Step by step Instructions:

  1. Put parchment paper on baking sheet.
  2. Combine cake mix, oil, eggs, and vanilla in a large bowl. Mix well.
  3. Add green food coloring (add until you achieve a grinch color). Mix well.
  4. Cover dough with plastic wrap and refrigerate for at least 20 minutes (DO NOT SKIP THIS STEP).
  5. After 20 minutes, preheat oven to 350 degrees fahrenheit.
  6. Mix cornstarch and powdered sugar in a small bowl.
  7. Take dough out of the refrigerator.
  8. Scoop dough into about a 1 ½ inch ball, or use a cookie scoop if you have one.
  9. Roll in cornstarch and powdered sugar mix.
  10. Put ball on cookie sheet and lightly press down to flatten slightly.
  11. Place in the oven and bake for 8-10 minutes.
  12. Remove from oven and leave on baking sheet for 3 minutes.
  13. Move cookies to a wire rack to cool.
  14. After cookies are cooled, take red frosting and scoop it into the corner of a sandwich baggie, twist the rest of the bag, cut off a tiny bit of the baggie to make your own piping bag.
  15. Pipe a heart into the center of the cookie
